I am a big fan of spaghetti. Vegetables? Not so much. But I do try to eat them. Off course – dish must be tasty, otherwise I won’t eat it never mind how healthy it can be.
I just bought a new device, that cuts vegetables in spaghetti shape, so decided to make a fast lunch to try it out.
Do not worry – device is not a must – you may cut zucchini in thin stripes with a knife.
When you have all ingredients prepared, heat up your pan, drop a little bit of oil (if you are cooking on non-stick pan and you are trying to avoid oil for diet reasons – you can skip the oil). When oil and pan are hot enough, drop chopped garlic, sizzle for few seconds, and add zucchini. Fry as long as it meets your taste. If you are using sun dried tomatoes, add it too. I am buying them in jars packed with oil am capers, so when I cook pasta with red sauce, I always put some in. But like I mentioned before – it is not mandatory.
When you finished frying, mix in pinch of grated mozzarella cheese and ready to serve!
It was a lovely lunch. Good for vegetarians, gluten free and for ones that calculates calories – portion is 200-300kcal (depends on amount of oil and cheese).
