Yammy :) I realised, that it was long ago when I made cupcakes. And accidentally found my flatmates magazine with picture of pretty cupcakes on the cover ...
Okay - I saw it and then decided that I did not bake for a long time :D I am among those who are looking at pictures of food and getting hungry.
125g caster sugar;
125g flour (I use self-raising - if you use plain, should add a teaspoon of baking powder)
2 tablespoons of milk;
1 teaspoon vanilla extract or vanilla sugar.
My way of mixing the goodies together is always the same (fat + sugar, then egg yolks, then the flour and all the rest, and in the end separately beaten egg whites). This combination always works perfectly - raise, spongy yammy cake :)
75g butter (margarine is no longer appropriate as well as inappropriate salty butter);
2 tablespoons milk;
1 teaspoon vanilla extract or vanilla sugar;
225g icing sugar (need to sift)
Bake cupcakes and leave to cool. Only then start making the frosting. Mix everything together really well and apply a thick layer on each cupcake. Decorate immediately before it thickens. I recommend eating in 2 days. For longer standing frosting spoils (however - it is butter). Personally I do not like butter frosting next day. Also - I would say, that in this recipe it is way too much frosting. Next time keep it only half of the amount. Or no frosting at all :D
Because cupcakes are yammy without anything else on top too :)
12 medium cupcakes;
Cooking time - 20 minutes;
Temperature - 190 º C / 375 º F.
